Salsa Verde & Other Local Goods

Vegetarian Table: Mexico

Using up some tomatillos, red tomatoes, onions, and bi-color corn! The salsa was from the cookbook listed above and pretty flavorful, but the red tomatoes really took it to new heights!

Has anyone ever heard of the term "chuck," meaning to chuck (de-husk) corn? I can't stop giggling at the term...

I think the word is "shuck" unless i'm mistaken, which i've been known to be on many occasions.

Being from Indiana myself, I've shucked a few ears of corn. In fact, a few of my friends in college picked and shucked corn in the summers to pay for their education.
